Spinach Rice with Guava Jelly

This preparation is very simple and quick to put together. Made with left over rice and frozen Spinach , some fresh cilantro-mint chutney and sweet guava jelly.

When I was 10 year old I  remember my mother and cousin sister made a pot full for guava jelly , Few weekends ago , while browsing through neighborhood  grocery store  I came across guava jelly and set my mind to use it in my next cooking experiment.

Ingredients here include:

1 . Leftover/cooked rice

2. Frozen Spinach

3.  Onions

4. Guava Jelly

5. Spices

6. Cilantro – mint chutney.

Preparation:
1. Heat oil saute’ onions  and spices till onions are translucent.

2. Add Spinach and saute’ till cooked.

3. Add rice and mix well and server with Chutney.

Garnish with Fresh Jalapenos and shaved Radish.
